SUPERSALAD 1

This Super Salad is full of goodness, flavour punches and nutritious extras...it is a meal in itself.

Fry up a sliced onion in a little oil until translucent.
Add chopped "col" cabbage and white pepper, cook until it is to your taste texture wise.
Set aside.

Cut a head of broccoli into florets and toss in olive oil, salt, pepper and garlic powder.
Char on a griddle pan until it starts to soften slightly and has nice blackened crispy bits..
Set aside

Place nuts on a baking tray, add salt pepper, turmeric and garlic powder, shake and lightly toast in the oven.
Set aside.

Mix a pot of greek yoghurt, a little creme fraiche, lemon zest, juice and salt, pepper and freshly chopped mint.
Set aside.

Chop some parsley, mint, rocket or baby spinach leaves and place in a large serving bowl with cooked, rinsed and cooled chick peas, chilli flakes, lemon zest, and some crumbled feta or goats cheese.

Fry some chopped capers, in oil with a deseeded chopped red chilli, and some garlic and pour over the broccoli.

Once everything has cooled, mix all of the above in a very large bowl and devour!!
